Acai bowls forever!

I posted yesterday about trying a smoothie bowl. I liked it. It was fine (I added too much water so the consistency was a little wonky) but the taste was good. I have heard of acai smoothie bowls and I set out this morning to procure all the ingredients needed to make one. Let me just say, do not hesitate to try this one. It was the consistency of pudding and it was chocolaty and fruity and really, just heavenly. There are already so many superfood benefits in this one from the scoop of Shakeology but adding coconut oil, acai and cacao adds to that. I fear I may never want to drink a traditional smoothie again but that’s OK because this is just as filling and just as nutritious.

Acai Protein Smoothie Bowl (makes 1)

Ingredients:

1 scoop Vanilla Shakeology

1 tsp coconut oil

1 tbsp raw cacao powder

1 Acai smoothie packet (the brand is Sambazon and can be found in the Freezer section at Whole Foods or other natural stores)

1/4 cup unsweetened cashew milk

2 tbsps coconut water or maple water (if you don’t have either of these, just make it a full 1/3 cup cashew milk)

1/4 tsp Himalayan pink salt

Directions:

1. Add all ingredients to a high power blend and blend until everything is well mixed. It will be a thick consistency like a pudding

Topping ideas:

I topped mine with 1/2 banana, sliced and some unsweetened shredded coconut but here are some other ideas:

  1. 1 tbsp chia seeds and hemp seeds and 1 tsp cacao nibs
  2. mixed berries
  3. sliced almonds and cacao nibs
